Weekday mornings can be crazy and I'm always trying to make thing easy for breakfast, but I don't want store made or processed food for our family. So, I've found something easy that my teenaged son, who has to leave at 6:30 each morning for school, can make himself and I know he gets a good breakfast.
This is an Easy Bake Egg Casserole and you only need THREE ingredients!
Here's the recipe:
1. 1 dozen eggs
2. Sliced ham {we use nitrate-free sliced ham from Trader Joe's}
3. Six cheese slices {we use Tillamook cheese, it's the tastiest}
Preheat oven for 400 degrees. Use a greased 9 x 13 glass baking dish. Mix 1 dozen eggs in a large bowl until they are well mixed - using a whisk. Pour eggs into 9 x 13 pan. Cut up ham slices into small pieces. Sprinkle in egg mixture. Bake at 400 degrees for 15 minutes, or until it's no longer liquid-y. Take out, add six slices of cheese to the top. Put back in oven and bake for 5 more minutes.
You can keep this casserole in the fridge for up to a week and slice up a little at a time to reheat either in the microwave or toaster oven. You can also turn into a breakfast sandwich by adding two slices of toasted bread or bagel or english muffin.
